Cook up the flavours of Portugal with this sweet, spicy chicken dish, cooked in bag to ensure perfection every time.

Ingredients

  • 4 chicken Maryland (1.5kg)
  • 1/2 red capsicum, diced
  • 1 packet Continental® Cook-in-Bag Portuguese Chicken Recipe Base
  • 1 medium sweet potato (kumara)(400g)
  • 200g each of snow peas, sugar snap peas, & broccolini

Instructions

  1. Preheat oven to 180°C/160°C fan forced.
  2. Place chicken and capsicum into roasting bag; add Continental Cook-in-Bag Portuguese Chicken Recipe Base.
  3. Knot bag loosely and shake gently; pierce the top of the bag twice with a fork for steam to escape. Place on a baking tray so chicken is in a single layer. 
  4. Roast in centre of oven for 40-45 minutes or until chicken is cooked. While chicken is cooking, steam or microwave sweet potato and mixed green vegetables.
  5. Carefully cut bag open to avoid escaping steam, transfer chicken to serving dish and pour over juices to flavour. Serve with sweet potatoes and mixed green vegetables

    Hint: If you like your chicken crispy, cut open the top of the bag after cooking, and put back in the over for a further 15 minutes.
