Chicken Koftas with Moroccan Spiced Couscous & Baked Cherry Tomatoes

These chicken koftas are a Moroccan delicacy – lightly spiced and served with salad and cous cous they’ll rock your Kasbah!

Ingredients

  • 1 x 250g punnet cherry truss tomatoes
  • Cooking oil spray
  • Freshly ground black pepper
  • 500g lean chicken mince
  • 1 teaspoon Moroccan spice blend
  • ½ cup dry breadcrumbs
  • 1 egg, lightly beaten
  • 1 packet Continental® Moroccan Spices Couscous
  • 1 cup (250ml) water
  • 2 teaspoons olive oil
  • Fresh salad for serving

Instructions

  1. Preheat oven to 180ºC.  Place the tomatoes on a paper lined baking tray, lightly spray with oil and season with black pepper. Bake for 20 minutes or until the tomatoes just begin to burst, remove from oven and keep warm.
  2. In a large mixing bowl, combine the chicken mince, Moroccan spice blend, breadcrumbs and egg. Divide into 8 equal portions and shape portions into a 7-8 cm sausage like shape and thread onto 8 skewers.
  3. Prepare the Couscous following packet instructions using the water and oil. Keep warm.
  4. Preheat a fry pan to moderately hot and add the oil. Cook chicken Koftas until browned and cooked through.
  5. Serve Couscous topped with chicken Koftas, baked tomatoes on the side and a fresh salad.
