Boscaiola is a creamy Italian classic, and this version is made with trimmed bacon and reduced fat cream meaning that you can enjoy it without breaking your diet! 

Ingredients

  • 250g fettuccine
  • 2 skinless chicken breast, cut into strips
  • 4 rashers bacon, trimmed, strips
  • 1 onion, sliced
  • 2 cups sliced mushrooms
  • 1 x 490g jar Continental® Stroganoff Tonight
  • 1 cup reduced fat cream
  • 1 teaspoon cracked black pepper
  • 1/4 cup finely grated Parmesan cheese
  • 10g shaved Parmesan cheese

Instructions

  1. Cook pasta according to packet directions. Drain well.
  2. In a medium pan, cook chicken, bacon, onion and mushrooms until brown and crispy.
  3. Add cracked pepper and Stroganoff Tonight; mix well. Simmer, uncovered, for 5 minutes.
  4. Stir in cream and parmesan; simmer 1 minute.
  5. Remove from heat and stir in pasta.
  6. Serve with shaved parmesan.

    Hint: Serve in bowls and top each serve with steamed green asparagus, crispy prosciutto strips and a soft poached egg. Garnish with cracked black pepper and shaved parmesan.
