Try out this delicious, creamy risotto for dinner tonight. The cheese and bacon delivers a rich flavour hit, balanced perfectly with the addition of peas and greens.

Ingredients

  • 1 packet Continental® Risotto Cheese & Bacon
  • 2 cups (500ml) water
  • 2 x 200g skinless chicken breast fillets, sliced thinly
  • 1 cup peas
  • 150g baby spinach leaves
  •  2 tablespoons finely grated Parmesan cheese
  • Freshly ground black pepper
  • Fresh salad for serving

Instructions

  1. Prepare the Risotto following packet instructions using the water. 
  2. Half way through cooking add the chicken and cook through in the Risotto.
  3. Two minutes before serving, add the peas.
  4. Just before serving, stir through the baby spinach.
  5. Serve Risotto topped with a little Parmesan and cracked black pepper.
  6. Serve with a fresh salad.
